I came across this recipe my uncle gave the family. They made this cake for my aunt's 60th birthday and it was a huge hit.
It is made with wine. Since there are still some sweet strawberries in the store it seems appropriate to try out this recipe and get us over our middle of the week humpday. Cheers!
STRAWBERRY WINE CAKE
Preheat oven to 325 degrees.
1 box white cake mix
1 package strawberry gelatin
1 cup strawberry wine
½ cup cooking oil
Grease and flour pan of your choice.
Combine cake mix with gelatin and other ingredients. Mix well.
Pour into pan and bake for 45 minutes.
When the cake is done and is warm in the pan, poke holes in it with a skewer or slim butter knife.
While the cake is cooling off, make the Wine Glaze.
½ stick butter
¼ cup strawberry wine
1 cup powdered sugar
Mix all ingredients together in a pot and bring to a boil.
Cook until thickened (or you get tired of boiling it).
Let cake cool.
Spoon or dribble Wine Glaze onto cooled cake.
Decorate the top with sliced strawberries or serve the strawberries on the side.
Enjoy it with a glass of your favorite bubbly!
